Crockpot Spinach Lasagna

It’s getting to be that time of year where I rely heavily on my crockpot. There is just something about cool weather and coming home to a nice cooked meal that cries comfort! I mean don’t get me wrong, anytime I come home to a home cooked meal I am ecstatic, but I do love my crockpot.

Here is what you’ll need to make my vegetarian (yup, Auntie Susie you can eat this one) lasagna!

I guess if you used Gluten free noodles this recipe could be gluten free too.

However, I am not sure how you would make this Vegan…. Use Vegan cheese?? That’s a thing right?!

I always prep my crockpot meals the night before, because I know I will not have time to put it together before I leave the house in the morning.

Anyway, first and most importantly you will need to grab your crockpot!


Here is a list of ingredients:

Oven Ready Lasagna Noodles

1 Bag of Spinach (frozen or fresh)

1 (16oz) Container of Cottage Cheese

2 Jars of your Favorite Sauce

1 pkg Shredded Mozzarella Cheese


Now that you have the ingredients out its time to build your lasagna.

First you want to spray your pan with olive oil spray, you don’t want anything sticking to your pot. Then add enough sauce to coat the bottom of the pan, and layer lasagna noodles over that. Next, add your cottage cheese and spinach and then repeat. Finally, top your lasagna off with sauce and the shredded cheese. Switch your crockpot to low and let it cook for about 6 hours.

BAM! Dinner is served!
