Apple Pancakes

I love apples! I don’t care what time of year it is, if there is anything apple on the menu I’m ordering it! This weekend I decided that I needed to get my apple fix, so I whipped up some apple pancakes. They are really easy to make and taste soooo good!

I always make a few extra to freeze; you never know when you’re  going to run late! To defrost them I simply pop them in the toaster.

You need to make a basic pancake recipe first. For some of you that recipe may be open a box of pancake mix add water and you are done, that’s totally cool. Others may already have a go to pancake recipe; if you don’t you can find one of my favorites  here.

Once your batter is mixed and ready to go add the following, and bam you’ll have some delicious apple pancakes.

1 large Apple, skinned and diced

2 tsps. Cinnamon

1 tsp. Fresh Ground Nutmeg (it really makes all the difference if you grind it yourself)

1tsp. Vanilla

1/8 tsp. Ginger

1/2 tsp. Cloves

Remember that you can adjust this recipe to fit your needs. If you hate ginger just don’t use it, or switch it with something else like Maple Syrup! Need a gluten free option use coconut or almond flour instead.
