Camp Breakfast Scramble
(Don’t worry this recipe is not just for the campground)
We love making breakfast! When we camp my husband cooks outside and I prep inside. This dish is simple and super tasty! You can add richer ingredients when you are feeling naughty and healthier ones when you are watching your waistline! This weekend we decided to make our scramble a bit healthier. We used 5 eggs and 6 egg whites, spinach, garlic, onions, shredded potatoes, and turkey chorizo (a Portuguese sausage). Here is the recipe!
1 medium sweet onion, diced
4 garlic cloves, minced
1 pkg. spinach (you can also use kale)
1 pkg. turkey chorizo
1 large potato or shredded potatoes
6 egg whites
2 Tbsps. Extra Virgin olive oil
2 Tbsps. milk
Salt and Pepper to taste
Lots of Coffee!
Begin by sautéing the onions, potatoes, and garlic in about 2 Tbsps. of Olive Oil.
When the onions begin looking translucent, add the spinach, chorizo, and shredded potatoes.
Let it cook for a few minutes while you prep the egg mixture. In a large mixing bowl, combine the eggs and egg whites with 2 TBSPs milk and a dash of salt and pepper. Whisk the egg mixture together until everything is combined, and then pour it over the meat and veggies.
As the eggs begin to cook scramble them. Once the eggs are cooked, it is time to dig in! We like to serve our scramble with buttered toast and LOTS and LOTS of coffee!
This is a delicious breakfast that you can adjust to make your family happy! You can add shredded cheese, peppers, kale, spinach, mushrooms, zucchini, ham, bacon, breakfast sausage, or whatever else you can think of! It is also how I trick the girls into eating some veggies! Granted we do have to serve her eggs with ketchup, but hey if it gets her to eat her greens who cares! LOL!
