Camp Breakfast Potatoes

When we go camping we always make a big breakfast on our first day there.  Its turned into a tradition and usually consists of eggs of some sort, with either bacon or sausage, and toast.  We decided to add something new this time, and boy am I glad we did! Here is a great recipe for breakfast potatoes. Don’t let the title fool you these can be made anywhere!

Camp Breakfast Potatoes 

One pkg. of fingerling potatoes (they cook faster than regular potatoes and there is no need to par boil)

1/2 of a Sweet Onion

4 Cloves of Garlic

2 Tbsps Olive Oil l

1 tsp. Rosemary

1 tsp. Thyme

Salt and Peper to taste

Cut the potatoes into mini cubes. Then dice up the onions and garlic. Place all of the ingredients into a medium size mixing bowl. Use a wooden spoon to mix everything together.

Add the ingredients to a non -stick pan and cook until potatoes are tender and everything looks delightfully crispy! Serve with what ever type of eggs you like!
